I have been told by one of my friends that I am a 'soul cooker'. I often make up recipes and do not always measure things. So not all of the recipes here will have specific measurements, but if you need them, just ask and I will try to figure them out!
Pasta PrimaveraIngredientspasta (I use bow tie)
chopped vegetables
meat (optional. I like chicken or shrimp)
olive oil
juice from half a lemon
oregano
rosemary
salt and pepper to taste
grated Parmesan cheese
Put water on to boil for pasta. Chop vegetables and meat. Add pasta to water when hot.

Stir fry meat in olive oil. Set aside in large bowl. Stir fry veggies and set aside in the same large bowl.

Drain pasta and add to same large bowl. Drizzle with olive oil and lemon juice. Sprinkle on the herbs and spices. And finally add the grated Parm.

Cut up some fruit for a side and dinner is served! I make this whenever I have extra vegetables lying around. I added a can of petite cut tomatoes too, but fresh or whatever you have work great. I love this with sun dried tomatoes and my husband likes it with roasted red peppers and mushrooms. Just use what you have!
